Classic Guacamole
Ingredients
- 2 ripe avocados
- 1 small red onion, finely diced
- 1 tomato, finely chopped
- Juice of 1 lime and zest
- Small bunch of fresh coriander, chopped
- Salt and pepper
Method
Mash avocados in a bowl until the desired thickness. I like it a little lumpy. Then add lime juice and zest until. Stir in onion, tomato, and coriander. Season to taste.

- Add chilli for heat.
- Swap lime for lemon if needed.
- Use as a dip, spread in wraps, or topping for chilli.
- Adding a touch of mayonnaise can help loosen the texture and create a creamy consistency.

- Best eaten fresh.
- Keeps 1 day in fridge with cling film pressed directly onto surface, may go a little brown on top, but that’s ok, either mix it in or skim and throw it away.
