Tzatziki
Ingredients
- ½ cucumber, grated and squeezed dry
- 220g Greek yoghurt
- 3 garlic cloves, crushed
- 1 tbsp olive oil
- 1 tbsp lemon juice
- Half lemon zest.
- Fresh dill or mint, chopped
- Salt and pepper.
Method
Mix the grated cucumber with yoghurt, then add the crushed garlic, oil, lemon juice and zest, and herbs. Season to taste. Chill before serving.
Variations & Tips
- Add a pinch of cumin for warmth.
- Use as a dip, salad dressing, or in wraps.
- Mexican: swap out the lemon for equal parts lime and the dill for equal parts coriander. Excellent with burritos, taco salad, tacos and nachos. Guacamole is great on nachos, too.
- Replace 100g of yoghurt with sour cream and add chopped green onions or chives (along with the dill). For more of a sour cream and chive dip.
Storage
- Fridge: 2–3 days in a glass sealed container.
