Ingredients

  • 1 tbsp olive oil
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 300ml ketchup
  • 2 tbsp brown sugar
  • 3 tbsp apple cider vinegar
  • 1.5 tbsp Worcestershire sauce
  • 1 tsp smoked paprika
  • ½ tsp chilli powder (optional)

Method

Heat oil in a saucepan, and sauté the onion until soft. Add garlic, cook for 1 minute. Stir in ketchup, sugar, vinegar, Worcestershire, paprika, and chilli. Simmer gently for 10–15 minutes until thickened. Blend smooth for a silky finish and adjust sweetness with more or less sugar.

Variations

  • Add honey for a sticky glaze.
  • Use chipotle paste for a smoky kick.

Storage

  • Fridge: 1 week in a glass-sealed jar.
  • Freezer: Up to 3 months.
  • Reheat: Warm gently on the hob or in the microwave.
