Ingredients
- 1 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 300ml ketchup
- 2 tbsp brown sugar
- 3 tbsp apple cider vinegar
- 1.5 tbsp Worcestershire sauce
- 1 tsp smoked paprika
- ½ tsp chilli powder (optional)
Method
Heat oil in a saucepan, and sauté the onion until soft. Add garlic, cook for 1 minute. Stir in ketchup, sugar, vinegar, Worcestershire, paprika, and chilli. Simmer gently for 10–15 minutes until thickened. Blend smooth for a silky finish and adjust sweetness with more or less sugar.
Variations
- Add honey for a sticky glaze.
- Use chipotle paste for a smoky kick.
Storage
- Fridge: 1 week in a glass-sealed jar.
- Freezer: Up to 3 months.
- Reheat: Warm gently on the hob or in the microwave.
