Festive Braised Red Cabbage
Ingredients (serves 6)
- 1 medium red cabbage, finely shredded
- 1 large onion, sliced
- 3 apples, peeled and grated
- 150ml red wine or cider
- 3 tbsp red wine vinegar
- 2 tbsp brown sugar
- 1.5 tbsp butter
- 1 cinnamon stick + 2 cloves
- Salt and pepper to taste.
Method
Melt the butter in a large pan over low heat, then add the onion and cook for 5 minutes, until soft. Add cabbage, apple, wine/cider, vinegar, sugar, and spices. Stir, cover, and simmer gently for 45–60 minutes until tender. Adjust seasoning before serving.
Tips & Variations
- Swap wine for cranberry juice if you prefer non-alcoholic.
- Add dried cranberries or pomegranate seeds for festive colour.
- Make ahead as flavours deepen overnight.
Storage & Reheat
Fridge: Keeps 3–4 days, improves in flavour.
Freezer: Up to 2 months. Defrost overnight, reheat gently in a pan.
Reheat: Add a splash of water or juice to loosen.
