Jacket & Sweet Potatoes — Base Recipe

Ingredients

  • 2 medium baking potatoes
  • 2 medium sweet potatoes
  • Olive oil
  • Salt and pepper

Method

Preheat oven to 200 °C (fan 180 °C). Scrub the potatoes and prick each one a few times with a fork. Rub with olive oil and a pinch of salt. Place directly on the oven rack or a tray. Bake for 45–60 minutes, or until crisp outside can be tested by stabbing with a knife and fluffy inside.

Split open and fluff with a fork, add some butter. Add your favourite toppings (see ideas below). Finish with herbs, lemon zest, or a drizzle of olive oil.

Topping Ideas & Variations

Spicy: Add chilli flakes, hot sauce, or harissa paste

Smoky: Stir in smoked paprika or use smoky cheese

Creamy: Top with crème fraîche, Greek yoghurt, or soft cheese

Greens: Add sautéed spinach, kale, or spring onions

Herby: Sprinkle with fresh parsley, coriander, or thyme

Protein: Add cooked sausage, veggie sausage, halloumi, or beans

Swap the base: Use mashed sweet potato or roasted wedges instead

Storage & Reheating

Fridge:

Cool completely and store in an airtight container. Keeps for 3–4 days.

Freezer:

Wrap individually or freeze in portions. Best used within 3 months. The texture may soften slightly, but still tasty.

Reheating:

Oven: 180 °C for 15–20 mins (wrap in foil to prevent drying) Microwave: 2–3 mins (covered), add a splash of water if dry

Hob: For toppings only — reheat gently with a splash of water or oil

From frozen: Defrost overnight or use microwave defrost setting before reheating
